Hakutsuru Nishiki
The Nadagogo geographical indication seal is awarded to sake breweries located in the Nadagogo region, a region of Japan known for its high-quality sake production. This seal guarantees that the sake produced by these breweries adheres to the strict quality standards and traditional brewing methods of the region. Nishiki carries that seal. Hand crafted and limited production, Nishiki is the zenith of the Hakutsuru kura.
Hakutsuru spent over 10 years developing their own exceptional Hakutsuru Nishiki rice, becoming the first successful crossbreed of Yamadaho and Wataribune in 70 years. Yamadaho is an excellent Sake rice but frustratingly difficult to grow and is known for creating “velvety smoothness”. Wataribune is an heirloom Sake rice which develops Sakes with a lovely “richness and complexity”.
