Introducing - Daikoku Masamune “Infinite Wisdom” Junmai Ginjo

Daikoku has always had a cultlike following, and that cult is fellow saké brewers especially in in Kobe, Japan. Sourcing rice from the local Hyogo region and brewing exclusively with the historically iconic Miyamizu water from Nada. Daikoku is a saké lovers Junmai Ginjo. Included the leadership at Hakutsuru Brewery.

Back in 1990, the Kobe earthquake destroyed nearly everything at the brewery, the president of Hakutsuru offered to let them use their facility in Hyogo. Daikoku Masamune took him up on his gracious offer but decided to keep their saké true to its roots; bringing in the water from their original source near the old brewery.

I had the pleasure of meeting Mr. & Mrs. Inoue, the husband-and-wife Toji team at the Hyogo brewing facility and they were the sweetest, most humble couple. Very proud of the sake they produce.

The sake? Wonderful. The combination of Yume-Nishiki rice and premium Miyamizu water creates a unique balance of aroma and umami. The body is smooth with a soft mouthfeel and a refreshing, dry finish with compliments of spice. It is an easy-drinking Ginjo that can be served slightly warm as well.
